FUNDAMENTAL BARISTA SKILLS
This course provides an up-to-date, solid foundation for those passionate about pursuing a career in the specialty coffee industry or for home baristas keen to achieve the best results in their home setting.
Learn the fundamental skills and techniques required to produce all espresso based drinks to the highest standards and gain valuable information to fuel your coffee passion. Easy to follow step-by-step extraction, milk steaming and brewing techniques will help all skill levels achieve the best possible results. Suitable for beginners to active baristas interested in learning current and emerging industry trends.

SENSORY SKILLS AND COFFEE KNOWLEDGE
In this session, we look at what’s involved in the production of great coffee from producing countries all the way to the café. Our focus is on the impact origin, harvesting, processing, roasting and equipment have on the end result. Designed to empower you with knowledge, develop your palate and fine tune your skills, this course is a great tool for anyone who enjoys or works around coffee.
LATTE ART TECHNIQUES
Completely practical. Students are guided through advanced milk texturing as well as pouring techniques essential to achieving latte art. Learn multiple designs and have the opportunity to practice them in a comfortable and relaxed environment. A fun and challenging course with the goal of presenting coffees that look as good as they taste

ADVANCED BARISTA SKILLS
This course delves deeply in to the theory and practical skills required to achieve high levels of espresso coffee quality and consistency. It covers the effects of water quality, coffee age, dose vs. grind setup, temperature and extraction yield on espresso quality and provides detailed techniques and theory to help refine the decision making process involved in adjusting any of these parameters. Attendees will engage in several practical exercises which outline the usage of these parameters to affect quality and flavour and are introduced to a system used to implement these minute changes in a café setting.
FUNDAMENTALS OF MANUAL BREWING
Discover a diverse range of equipment and learn how to brew filter coffee with confidence. This course focuses on understanding brew ratios, brew parameters and result analysis for the following manual brew devices:
1. French Press
2. Costarican Dripper
3. Vietnamese dripper
4. Percolator
5. Chemex pour over devices
6. Siphon
7. Ibrick or Turkish coffee
8. Italian pot/ mocha cappuccino pot
9. Italian pot/ espresso pot
10. Dutch drip
Students should leave with a deep understanding of brewing and how to affect brew results. Useful in the both commercial and home environment.
OJT ON THE JOB TRAINING
Each of our outlet facilities is equipped with standad brewing equipment and is the ideal environment for training your staff in a café setting. Depending on your requirements, the Academy is available for hire by the half day, full day or week.
